Poori

Ingredients ( serves 2)
  1. Whole wheat flour 2 cups
  2. Salt 1 tsp
  3. Oil 1 tbsp
  4. Ajwain 1 tsp
  5. Water
  6. Oil to fry

Preprations:-

  1. Mix together all ingredients except water.
  2. Now slowely start adding water and knead the flour.
  3. Repeat step 2 untill you get a firm dough.
  4. Keep the dough for half an hour and knead again (Optional).
  5. Divide the dough into small round balls.
  6. Roll out with a roller on an oiled board.
  7. Heat the oil in a pan untill it starts smoking.
  8. Put the rolled out poori in pan one at a time.
  9. Hold them under the oil on the first side until they puff.
  10. Turn and fry till light brown.
  11. Drain.
  12. Serve hot with Chole, Green Chutney and Tamarind Chutney.

Punjabi Chole (white chick peas)

Ingredients (serves 4):
  1. Chole (white chick peas) 1cup
  2. Onions 2 big
  3. Tomatoes 3 big
  4. Green chillies 2
  5. Ginger 1/2 inches
  6. Garlic 10 flakes
  7. Mango Powder 1/2 tbsp
  8. Red Chilli powder 1/2 tsp
  9. Salt according taste
  10. Cumin seeds 1 tbsp
  11. Cinnamon stick 1/2 inch
  12. Cloves 4
  13. Oil 2 tbsp

Prepreprations:-

  1. Soak chole overnight in plenty of water.
  2. Roast cumin seeds,cinnamon stick,cloves on hot tawa and grind.
  3. Grind together onions, tomatoes, green chillies, ginger, garlic.

Preprations:-

  1. Remove water from chick peas.
  2. Take the chick peas in pressure cooker.
  3. Add fresh water double the quantity of chick peas.
  4. Add salt and preesure cook for 45 minutes first on high flame then on low flame.
  5. Take out some chick peas and crush slightly.
  6. Heat oil in a pan.
  7. Add mango powder, red chilli powder to the oil.
  8. Now add grinded mixture of onion and tomatoes.
  9. Cook untill oil seprates.
  10. Now add the grinded dry spices.
  11. Add cooked chick peas and boil for 15 min on low flame crushing slightly.
  12. Adjust consistancy according to your preference.
  13. Garnish with Green Corriander.
  14. Serve hot with poori.
