coconut sambhar

Ingredients:
1. Toor Daal 1 cup
2. Coconut chopped 1/3 cup
3. Tomatoes 3
4. sambhar powder 1 Tbsp
5. Tamarind a small ball without seeds
6. salt to taste
7. Oil for tempering
8. Mustard seeds 1 tsp
9. Whole red chiili 1
10. kari patta 1 tsp
11. green chillies 2 chopped
Steps to follow:

1. preesure cook daal, whole tomatoes, green chillies,little salt with 3 cups of water for 10 minutes.
2. Open the cooker and take out tomatoes.
3. Grind together Tomatoes, sambhar powder, coconut, tamarind.
4. Mash the daal thoroughly and add the grinded mixture in it.
5.Add the remaining salt and water to adjust thickness. Boil for atleast 15 more minute.
6. prepare the tempering by heating the oil.
7. in hot oil add mustard seeds, red chilli and kari patta.
8. Pour over the sambhar and cover for 5 minutes.
9. tastes good with idlis and masala dosa.

Bisi Bele Bhat

Ingredients:

1. Rice 1/2 cup
2. Toor Daal 1/2 cup
3. 1/2 cup Carrots chopped
4. 1/4 cup french Beans chopped
5. 1 onion chopped
6. 1/4 cup capsicum chopped
7. 1 potato chopped
8. 2 tomatoes chopped
9. Green chilies 2 chopped
10. Tamarind a small ball
11. MTR bisi bele bhat powder 1 Tbsp
12. Salt to taste
13. Oil
14. Mustard seeds
15. whole Red chilli
16. Kari Patta 1 Tsp
17. Hing /asafoetida a pinch
18. Coriander 1 Tbsp
19. peanuts sauted 1/4 cup

Steps to follow

1. soak the tamarind in 1/2 cup of warm water.
2. In pressure cooker add rice, daal,little salt, turmeric powder with 2 cups of water.
3. cook for 10 min or till they are done.
4. In another cooker add all the veggies and cook till done.
5. Mash all the veggies and add into rice mixture.
6. Now add tamarind juice, Bisi bele powder , remaining salt and some water to adjust thickness.
7. Mix thoroughly and simmer on low heat for another 10 minutes.
8. heat oil in a pan.
9. add hing, mustard seeds, kari patta and red chilli one after another in the same order.
10. Pour tempering over the bisi bele bhat and cover for few minutes.
11. garnish with coriander and peanuts.
12. tastes best with khara boondi.

Pasta in tomato sauce

4 tbsp olive oil
1 onion sliced
1 clove garlic sliced
1 red bell pepper thin strips
1 green bell pepper thin strips
1 tbsp oregano powder
5 tomatoes peeled and chopped
salt to taste
black pepper to taste
1 cup pasta

Steps to follow

1. cook pasta according to instructions.
2. Heat oil and saute onion and garlic for 3-4 min.
3. Add capsicum and bell pepper.
4. After 3 min add tomatoes, salt, pepper,oregano and cook until everything is cooked.
5. Add cooked pasta.
6. Serve hot.

Ideas for Pasta

Basil and tomato Pasta.

1. Heat oil.
2. Add chopped tomatoes , sliced olives and chopped fresh basil.
3. Add cooked pasta.


Zucchini and cheese Pasta

1. Cook Pasta
2. Heat oil.
3.Saute garlic and thinly sliced zucchini.
4.Add pasta and cheese.

Herbs Pasta

1. Heat oil.
2. Add garlic and red chilli flakes.
3. Add pasta and fresh herbs like basil, parsley and oregano and some cheese.

Pizza

Ingredients: (serves 2)
Pizza base 2 pcs
Tomato Ketchup according to taste
salt to taste
Chilli flakes according to taste
basil / oregano flakes
1/2 capsicum cut thin slices
1/4 onion thin slices
5 mushrooms thick slices
3 olives cut rounds
Mozzarella cheese 1 cup
corn kernels (handful)
Green chilli or jalapeno (optional)

How to proceed:-

1. Pre heat oven for 350F.
2. Mix salt,chilli and oregano in tomato ketchup.
3. spread the mixture over pizza bases.
4. arrange the veggies.
5. spread cheese over veggies.
6. Bake until cheese melts (takes 15 min approx).
7. Serve hot.

Pasta with Sun-dried tomatoes and olives

Ingredients:

1 cup Pasta
3/4 cup cream
5 green olives - finely chopped
1/4 cup sun dried tomatoes, washed and chopped
salt and pepper to taste.

1. cook your pasta according to instruction until almost done( for elbow pasta it ll take around 6 min).
2. Heat cream, olives and chopped tomatoes on a low heat until fully mixed and slight pink in color.
3. Add pasta, salt and pepper.
4. If thick you can add some water in which pasta was boiled.
5. Serve warm

Peas Poha

Ingredients( serves 2):-
  1. Poha( Beaten Rice) 1 cup
  2. Green peas 1/2 cup
  3. Corrainder Leaves 1 tbsp
  4. Green Chilli 1
  5. Salt according to taste
  6. Milk 1/4 cup
  7. Mustard seeds 1 tsp
  8. Oil 1 tbsp

Pre Preprations:-

  1. Grind together Milk, Corriander leaves,Green chilli.
  2. Wash poha, add salt and the above mixture to it.

Preprations:-

  1. Heat oil in a deep pan.
  2. Add mustrad seeds to the hot oil.
  3. Now add the green peas.
  4. Cook for approx 7 min with close lid on medium flame.
  5. Stir occasionaly.
  6. Now add the poha mixture and mix gently.
  7. Cook for another 5 - 10 min on low flame with closed lid.
  8. Serve hot.
